When the weather gets chilly, there’s nothing quite like a comforting bowl of soup to warm the soul. This Cheeseburger Soup brings all the classic flavors of your favorite burger into a creamy, dreamy dish that’s perfect for any time of the year. Packed with savory beef, melty cheese, and a rich, creamy broth, it may be one of my new favorite soups.

Ingredients:

  • 32 oz beef broth
  • 7-8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 lb ground beef
  • 2 tbsp Worcestershire sauce
  • 1.5 tsp dried dill
  • 1 tbsp Dijon mustard
  • 1 1/2 cups shredded cheese (I used a Dill Havarti cheese I got from Whole Foods)
  • Rice — this is to have a more hearty soup
  • Pickles + Tomatoes to garnish

How to Make Cheeseburger Soup:

  1. In a large pot, brown the ground beef over medium heat. Break it into crumbles as it cooks, ensuring an even texture. Once browned, drain any excess grease and return the beef to the pot.
  2. add the beef broth, Worcestershire sauce, dill, and Dijon mustard to the pot. Bring the mixture to a gentle simmer. Let it cook for about 10 minutes to allow the flavors to meld together.
  3. Reduce the heat to low and stir in the cream cheese. Allow it to melt slowly, stirring occasionally to ensure a smooth texture. Next, add the heavy cream, blending it in gently until the soup is rich and creamy.
  4. Stir in the shredded cheese a handful at a time, allowing it to melt completely before adding more.
  5. Give the soup a taste and adjust the seasoning if needed. You can add a pinch of salt or a little more dill, depending on your preference.
  6. Ladle the Cheeseburger Soup into bowls and garnish with extra shredded cheese, a sprinkle of dill, or even pickles + tomatoes. I served mine over rice to make more filling!
