If you’re anything like me, as soon as fall hits, you’re craving something hearty, soul-warming, and maybe a tad bit spicy. Well, my fellow fall girlies, you’re in for a treat! In this blog post, we’ll show you how to whip up this cozy delight that’s perfect for those chilly autumn evenings. So, put on your favorite sweater + cozy slippers, grab a ladle, and let’s taco ’bout the irresistible flavors of fall! 😉

INGREDIENTS

  • 1 lb beef, ground
  • 4 cups beef bone broth (Kettle And Fire Beef Bone Broth)
  • 1/2 packet of taco seasoning (can use the full amount if desired)
  • 1 can diced organic tomatoes
  • 1 can organic green chilies
  • 1/2 tbsp garlic powder
  • 1/2 tbsp onion powder
  • 1/2 tbsp cumin
  • 1/2 tbsp paprika
  • Cayenne pepper (to taste, depending on your desired level of spiciness)
  • Salt (to taste)
  • 1 block organic cream cheese
  • 1 cup raw milk cheddar cheese (can use shredded cheese if desired)
  • *Optional Rice (if you want a more hearty soup)

Instructions:

  1. In a skillet, brown the ground beef over medium heat. Break it apart as it cooks until it’s fully browned and no longer pink. Drain any excess fat if necessary.
  2. Transfer the browned beef to your slow cooker.
  3. Pour in the beef bone broth
  4. Add the diced organic tomatoes and organic green chilies (with their juices) to the slow cooker.
  5. Sprinkle in the taco seasoning, garlic powder, onion powder, cumin, paprika, cayenne pepper (if desired), and a pinch of salt. Stir to incorporate the spices into mixture.
  6. Cover the slow cooker and cook on low for 1-2 hours. This will allow the flavors to meld together!
  7. About 30 minutes before serving, cut the cream cheese into smaller chunks and add it to the slow cooker.
  8. Shred Cheddar Cheese. Stir in the raw milk cheddar cheese until it’s fully melted and the soup is creamy and cheesy.
  9. Taste the soup and adjust the seasoning as needed, adding more salt or spices if desired.
  10. Serve Taco Soup hot, garnished with a bit of cheddar cheese and a maybe even a dollop of sour cream!

If you want a more hearty soup, add in rice! To do this, cook rice according to package. Once rice is fully cooked, and cream cheese + cheddar have been added, stir in cooked rice.
