INGREDIENTS

1 package Sausage (chicken or turkey)

2 medium sweet potato, diced into ½ inch cubes

½ lb brussels sprouts, quartered

2 small apples, diced into ½ inch cubes (I used fuji)

4 tsp olive oil, divided

1 tsp dried thyme

1 tsp garlic powder

1 tsp onion powder

1 tsp salt, plus more to taste

1 tsp pepper, plus more to taste

 DIRECTIONS

1. Dice up brussels sprouts, sausage, + apples

2. Toss Brussel sprouts in 1 tsp olive oil and bake at 400 degrees for 15 minutes. Stir occasionally

3. Add water and sausage to pan + cook on high for 10 minutes

4. Toss sweet potatoes in 1 tsp olive oil and cook in air fryer at 390 for 15 minutes 

  • If you do not have an air fryer, Heat a large heavy skillet over medium heat. Add 2 tsp of olive oil and the sweet potato. Cook sweet potato, stirring occasionally, for 5 minutes, until the outside starts to brown. Turn heat to low, add in ⅓ c water, cover and cook for 3-4 minutes, so that the sweet potato begins to soften.

5. Add diced apples, remaining olive oil + spices into brussels sprouts + cook for an      additional 5 minutes

6. Combine all ingredients
