Warm up with a bowl of comfort! This loaded potato soup is creamy, rich, and packed with all the best toppings—think crispy bacon, cheddar cheese, and fresh green onions. It’s a hearty dish that feels like a cozy hug on a chilly day, perfect for satisfying those comfort food cravings. Grab a spoon and dig in!
Ingredients
1 pack of bacon bacon uncooked
3 Tablespoons unsalted butter
1 cup white onion chopped
3 cloves garlic minced
2 ½ lbs potatoes
4 cups chicken broth
1 teaspoon paprika
1 ½ teaspoons salt
1 teaspoon peper
⅔ cup heavy cream
⅔ cup cream cheese
8oz Shredded Cheese – I shred my own
Green onions / chives – used to top
** for a more filling soup, I added in cheddar jalapeño sausage

Directions
1. Place bacon pieces in pot over medium heat and cook until bacon is crispy. Move the bacon to plate and set aside. Leave fat in the pot – I used it all but you do not have to
2. Add the butter to the bacon fat and melt. Add in diced onion + cook over medium heat until onions are soft (5 minutes) Stir in garlic
3. Add diced potatoes to the pot along with chicken broth, salt, pepper, and paprika. Stir to combine. Bring to a boil and cook until potatoes are tender (about 10 to 12 minutes)
4. Remove from heat. Strain out potatoes. I used a ladle with holes and scooped them onto a cutting board. Smash potatoes with a fork (you can also use a blender, but I like it chunky)
5. Add the heavy cream and cream cheese Allow soup to simmer for 15 minutes on low. Stir in shredded cheese and bacon.
Top with green onions / chives
*To make this meal more filling, I add in cheddar jalapeño sausage 😋
