This Taco Tuesday we are getting extra wild! First, we will make my sister’s guacamole recipe! Then while we snack on our chips + guac, we will make Buffalo Cauliflower Tacos!
Guacamole Ingredients
4 Avocados
1 Jalapeno
4 Roma Tomato
1/2 bunch of Cilantro
1/2 Red Onion
Lemon
Lime
Salt
Pepper
Directions

Pit the avocados and mash in a bowl

Dice up jalapeños, tomatoes, cilantro, red onion + add to the bowl

Add in the juice from the lemon + lime

Add salt + pepper to taste
NOW – While you are enjoying the guacamole + chips (maybe even a marg or a White Claw) start to make your tacos!
Buffalo Cauliflower Ingredients needed:
1 cup whole wheat flour
1 cup almond milk
1 teaspoon paprika
2 teaspoons garlic powder
1 teaspoon salt
½ teaspoon pepper
1 head cauliflower
3/4 cup hot sauce
1/4 cup of honey
2 TBSP Olive Oil
1 Bag of Coleslaw mix
1 bunch of chopped fresh cilantro

Avocado Crema Ingredients
1 avocado
1/2 cup plain Greek yogurt
1/4 cup water
1/2 teaspoon salt
a squeeze of lemon + lime
1/4 cup of cilantro
Cauliflower

Preheat the oven to 450˚F. Line a baking sheet with parchment paper.

In a large bowl, add the flour, paprika, garlic powder, salt, pepper, and almond milk, + stir until combined.

Break the head of cauliflower smaller pieces. Add the cauliflower pieces to the mixture + make sure each piece of cauliflower is evenly coated. Arrange the coated cauliflower on the baking sheet. Bake for 20 minutes, flipping halfway.

Meanwhile, in a small bowl, combine the buffalo sauce, coconut oil, and honey and stir until evenly combined. Brush the buffalo sauce mixture on the cauliflower and bake for another 20 minutes.
Avocado Crema: Mix all ingredients in a blender until smooth.
Slaw: Add the avocado crema into the slaw. Stir until creamy.
Tacos: This is the best part! Add the slaw mixture into your tortilla. Then add in buffalo cauliflower + ENJOY!
